No-Bake Pumpkin Spice Energy Bites

A fun, filling, & satisfying snack for your workday or post-workout fuel this fall!

A spicy new spin on your typical "protein ball" recipe.

Say goodbye to expensive store-bought protein bars!

These energy bites require minimum effort, have flexible ingredients, and taste absolutely delicious.

They are also very budget friendly!




Yield: 25 servings

Ingredients:

  • 2 to 2 1/2 cups dry, uncooked old-fashioned rolled oats

  • 1/2 cup creamy peanut butter or other nut butter*

  • 1/2 cup pumpkin puree

  • 2 Tbsp chia seeds

  • 1 Tbsp ground flaxseed

  • 1/4 cup honey

  • 1 1/2 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/4 tsp pumpkin pie spice

  • 1/2 cup to 3/4 cup dark chocolate chips (I use more because I love chocolate!)

Directions:

1. In a large bowl, mix all ingredients together, except chocolate chips. Stir until well combined. Add more oats if the mixture seems too sticky.

2. Stir in chocolate chips.

3. Roll a small amount of the mixture into a ball in your hands. Use a cookie scoop if you have one! Bites may vary in sizes.

4. Repeat until all of the mixture is used.

5. Store energy bites in an air-tight container and refrigerate for up to 7 days.


*sun butter or tahini also works if you prefer it, or you are allergic to nuts!
