What I love about this recipe is that it's quick, easy, and great for meal prep!
Canned salmon has a long shelf life, so it's a good option for an item to keep on hand if you need a last-minute dinner idea without having to worry about the fish spoiling or going to waste before you can use it!
Salmon is a great source of healthy fats, is high in protein, and packed with vitamins and minerals. The rolled oats are also an added source of protein, as well as fiber to leave you feeling full and satisfied!

Cook time: 10 minutes
Total time: 15 minutes
Yield: 4 servings
Ingredients:
1 can of salmon, drained (1-14 oz. can)
1c old fashioned rolled oats
1 small onion, diced
1 egg, beaten
1/2 lemon, juiced
1 Tbsp Dijon mustard
1 Tbsp Sriracha
1/2 tsp salt
1/2 tsp black pepper
1 tsp olive oil
Directions:
1. Mix canned salmon, oats, onion, egg, lemon juice, mustard, Sriracha, salt, and pepper until combined. Divide mixture into four salmon patties.
2. Heat olive oil in a large pan/ skillet over medium heat. Cook salmon patties until browned 7-8 minutes on each side.
Add cheese, lettuce, tomato, sriracha mayo (see recipe notes), and onion, if desired. Serve immediately on a whole grain or brioche bun.
Recipe Notes:
Add an extra tsp or 2 of Sriracha if you like more spice!
Sriracha mayo recipe:
Mix 4 Tbsp mayonnaise with 2 Tbsp sriracha sauce. Add 1 tsp of lemon juice and 1/2 tsp honey. Mix well and spread on your burger!
